John,
I would go for the Sub (no date) the Sea Dweller will in your case never be subjected to saturation diving and the escape valve may become a weak point over the years because it will never 'pop' like it is designed and thus be in the seal for years. The Sub nodate is made in very small numbers and will become more rare than the Sub date.
It will also save you some 800 bucks.
